Chicken and Sausage Gumbo 3
cups celery (chopped)
3 cups bell pepper (chopped)
3 cups onions (chopped)
2 lbs andouille sausage
2 lbs roasted chicken meat
1 gallon chicken stock
6 bay leaves
granulated garlic (to taste)
a pinch white pepper
1 teaspoon crushed red pepper
1 teaspoon thyme
1 bunch green onions
a pinch parsley

Brown Roux
1 cup oil
1 cup flour
Heat oil, wisk in flour, slowly brown until desired color.
In a large gumbo pot, sauté’ onions, bell peppers & celery
until lightly carmalized.
Add sliced sausage and chicken meat.
Cook together for 5 minutes, and then add spices and chicken
stock.
Cook over medium heat for 30 minutes.
Add roux, a spoon at a time until desired consistency.
Add green onions and parsley.
Serve over rice.
